Braised Chicken Simple and Delicious

This meal is so tasty and more importantly simple to make. It consists of chicken thighs, breasts or legs whatever you like best. We decided to go with thighs to get that good rich dark meat. I paired it with some red potatoes, and steamed broccoli. The most important thing is to have a good Dutch Oven.

Preheat your oven to 350˚and begin your process. The first thing you need to do is season your chicken with some salt and pepper, then cover the chicken in a light layer of flour. While you are doing that heat a bit of olive oil into your Dutch Oven. Once it is good and hot place your chicken into the oil and brown each side for 3-5 mins. Then pull each piece out and set it aside for a bit.

Next chop up some celery and onions and throw them into the oil already in the bottom of the Dutch Oven. Add a bit more salt and pepper for taste and chop up some garlic and add it to the mix. Let that sit and cook for a bit stirring it around to make sure it is all cooking evenly. Once your onions are translucent add in some chicken stock, enough to make sure your chicken will be covered. Add a couple of bay leafs and bring it all to a simmer.

Once your meal starts to simmer put your chicken back in and throw the whole thing in the oven for 90 mins and just let it go. Now start work on your potatoes. Cut them into 1/4 inch discs and place them into a pot of boiling salted water for 15-20 mins or until they get a bit soft. Strain the potatoes and run some cold water over them to stop them from cooking and let them sit. Once you have about 10 mins left on your chicken heat up some olive oil in a pan, season your potatoes with salt and pepper and brown each side.

I suppose that there is a lot of writting here, but I assure you it is a simple process and one very much worth the work. This was an amazingly good dinner, and the kids loved it. Jack especially liked the celery.

Once again I must say, I am not a chef and do not pretend to be. I am simply a dad, and husband trying to give my family a great healthy life.
