A Great Comfort Breakfast


Growing up when ever my mom made some french toast we knew that it was going to be a good day. To me it is one of the best comfort foods and I think it gets a bad name for being unhealthy. I am hear to tell you that is not the case. If you start with the proper ingredients it is a great way to start the day.

Ingredients for 1 Serving:
2 Large Eggs
1/2 cup of Milk
Splash of Vanilla Extract
1 Tsp of Ground Cinnamon
3 Slices of Wheat Bread
1 Tsp of Powder Sugar
1/2 cup of fresh Strawberries

Now it is simple. Mix the first 4 items together in a large flatish bowl until all stirred together. Now heat a skillet, or pan, and add a small tab of butter just to add some non stick to the pan. Now dip each piece of bread front and back into your batter mix and lay it on the hot surface. Flip it after a minute or so and do the other side. Go back and forth till you are happy with the way it looks. Once you have cooked all of your pieces you can cut them and sprinkle them with a bit of powder sugar, add some strawberries or other fresh fruit and you are done.

Protein: 24g
Carbs: 53.8g
Total Calories: 459

You can easily cut 70 calories out of this breakfast by only using 2 pieces of bread and it would still be a great meal. So there you have it, simple, healthy, and delicious. Make it for your family tomorrow morning and enjoy.

    Ah yes, moms french toast! But you forgot the best part, heaping spoonfuls of sugar then fold em up and eat it like a taco!

    Spinach Dip

    A tastier version of a modern classic. You’ll love the delicious tang of yoghurt.

    1½ cups Plain Mountain High Yoghurt
    ¼ cup light mayonnaise
    ¼ cup light sour cream
    1 10-oz. package frozen chopped spinach, thawed and squeezed dry
    1 teaspoon minced garlic
    ¼ teaspoon salt
    ⅛ teaspoon black pepper
    Dash nutmeg
    1 teaspoon grated lemon zest
    In a medium glass or ceramic bowl, gently combine yoghurt, mayonnaise, sour cream, and spinach. Add garlic, salt, pepper, nutmeg, and lemon zest, and stir until well blended. Cover and chill for about 2 hours before serving.

    Makes about 3 cups.
